Lemon and Coconut Slice

Australia is awesome!  Reason 438 – morning and afternoon tea are routinely observed and usually include cake of some description.  This is a cultural difference I can subscribe to wholeheartedly!  This goes way beyond ‘elevenses’ with a chocolate hob-nob, we are talking proper cakes, or quite regularly a ‘slice’ (traybake).

I have every Thursday off work so I am going to make something yummy every week – and I started yesterday with a lemon and coconut slice.

This is make in three parts (base, lemon curd, coconut topping) which looks really faffy but isn’t at all.

Base – cream together the butter and sugar, mix in egg, stir in flour and coconut until well combined.  Press into a lined 19x29cm tin (this will seem impossible as it is not a lot of mixture and it is pretty stiff but just do your best with the back of a spoon!) and bake at 180c for 15 minutes.

  • 100g butter, softened
  • 100g caster sugar
  • 1 egg (beaten)
  • 115g plain flour
  • 20g desiccated coconut

Lemon curd – whack all the ingredients in a wee pan and cook until boiled and thickened.  Take off the heat and let it cool down a little – by that time the base should be done.  I had kind of streaky bits in my lemon curd which I was a bit worried about but I forged ahead anyway and it didn’t make any difference.

  • 50g butter, chopped
  • 100g caster sugar
  • 1 egg, whisked
  • 2 tsp finely grated lemon rind
  • Juice of one lemon

Coconut topping – beat the eggs then chuck in the sugar and coconut (I only had desiccated coconut so I just used 215g of that) and stir until it’s all combined.

  • 2 eggs
  • 100g caster sugar
  • 130g shredded coconut
  • 85g desiccated coconut

When you take the base out of the oven, pour the lemon curd on top, spread it all our and then drop spoonfuls of the coconut mixture on top of that, smooth together and press down a bit.

Put back in the oven for about 20 minutes until the top is golden.  Take out and allow to cool completely in the tin before cutting.  (Go out for this bit if you can because this is torture!)  If you don’t let it go cold then it will be really crumbly and hard to handle.

I made this yesterday hoping that I would have some for lunchboxes next week – no such luck – it was WOLFED!  I had to move fast to make sure I got a picture before it was all gone and even then the only bit that was left was mine and had a bite out of it!!  I will definitely make it again – yum!
